Ingredients: Cucumber 600g, Salt 1/4 tsp, dried Sweet Plums 2pcs
Seasoning Amoy Rice Vinegar 250ml, Rock Sugar 250g, Water 3/4 cups (187.5ml)
- Bring the sauce ingredients to the boil and simmer over a low heat until the sugar has completely dissolved. Remove from the heat and add the dried plums. Leave to cool and then pour into a glass container.
- Cut the ends off the cucumber and use them to rub the exposed ends until small bubbles appear. Pat the cucumber dry with some paper towel and then cut lengthways. Use a spoon to remove the seeds and then cut into long chunks or cubes. Mix with the salt and leave to rest for 1 hour. Rinse 3 times with boiling water and then squeeze to remove any excess moisture. Add the sugar and vinegar sauce, cover with a lid and chill in the refrigerator for 8 hours before serving.
